I came of age as a cook in New York when people didn't particularly go to cooking school. It wasn't a thing. When people tell me they want to change careers and go to cooking school, they sometimes ask my advice. I usually say they should go if they like school but not if they don't. It can give you a nice overview. Either way, though, you will start your career by peeling onions.
